Higher ed customers may want to disable the Assignments app because they already use other ways of assigning and tracking assignments. For them, it can be confusing to students and faculty when the Assignments app is pinned to the left rail of Teams.
Pinned apps in Teams are normally assigned using a Setup Policy in the Teams Admin Center at https://admin.teams.microsoft.com ( Teams apps > Setup policies ). Here, you can configure which apps are pinned to the Teams app navigation bar and the order in which they are displayed.
Notice that the disappearing banner at the top of the policy says, " Because you have at least one Office 365 Education license, the Assignments app will be automatically included in each app setup policy. " You will also notice that the Assignments app is not listed as a pinned app, so you cannot remove it.
In order to remove Assignments from pinned apps, configure a Permission Policy ( Teams apps > Permission policies ). Customers who want to remove this would normally edit the Global (Org-wide default) policy, but you can also create a new policy for this and assign it to specific users.

Create and communicate with user-uploaded emoji in Microsoft Teams. These custom emoji help build culture and identity, reinforce branding, provide tone, and add clarity to messages. Share custom emoji with anyone in the organization, including external users in shared channels.
Users can create custom emoji from an image or GIF file for anyone in their organization to use as reactions and emoji.
Note: Admins may limit who can create custom emoji before they can be used. Additionally, anyone can right click on any custom emoji to see who created it and when.
Tip: Create custom reactions to help identify status or categorize responses during multi-step processes. For example, create unique emoji for each of your team members to show participation in collaborative projects. Or try using custom emoji to signify completion of specific processes. Use custom emoji in channel, chat and meeting messages and replies or to react to existing messages.
Select the emoji to add it to your message.
Tip: Celebrate team accomplishments and shared experiences with custom reactions and emoji celebrating birthdays, work anniversaries, launches and events.
Note: Teams admins may limit who can delete custom emoji.
If you're able to delete a custom emoji, you'll see the option when you right-click on it. To delete the emoji, select Delete . Then confirm your choice.
Deleting it will immediately remove it from your list. However, it may take a few days to no longer show to everyone.
Tip: Still seeing a deleted emoji? Try clearing your cache to instantly remove it.

I still have former students appearing in my assignment list. It looks like your MS team is refreshing to reflect the changes. I would suggest you manually restart the app by right-clicking the icon in your taskbar (Windows) and selecting Quit. After you quit, click the app icon to open it again.

Only the owner of a class team can delete it. Students cannot delete class teams or leave them. However, students can be removed from the class team by the team's owner. Deleting a class permanently removes access to your class, assignments, channels, and calendar for everyone, including yourself.
